The product consisting of canned artichoke hearts, packed of fresh and sound artichokes Cynara Scolymus L., free of mold and insects and have reach a good grade of ripeness. The artichokes are cutted to remove not edible parts of raw artichokes and preserved by acidification and heat treatment to reach a commercialy sterile product with more than three years self life. The varieties used for canned artichokes are the white ones.

The artichokes are canned in different styles depending of artichoke hearts shape:

• Artichoke hearts. The product consisting of whole artichoke hearts keeping edible leaves and artichoke bottom.
• Quartered artichokes. The product consisting of four or six sector of whole artichoke heart.
• Artichoke bottoms. The product consisting of artichoke hearts without leaves keeping only the bottom of the artichoke heart.
• Sliced artichokes. The product consisting of artichoke heart cutted in slices.
• Artichoke pieces. The product consisting of random pieces of artichoke heart.

The artichokes are packed in two different packing media:

• Artichokes in brine. The artichoke hearts are preserved in a light brine and citric acid for pH regulation.
• Marinated artichokes. The artichokes are preserved in a mix of water, vinegar , oil and vinegar for pH regulation.
